Tortilla Cone with grilled beef & salad

Instructions

Combine oil, vinegar, cumin, coriander, mustard and sugar together in a small bowl.

Place beef in a shallow dish and pour over half of the oil and vinegar mixture. Allow to marinate for at least 1 hour if possible.

Heat a frying pan over a high heat and quickly cook meat until golden brown.

Warm tortillas either in a microwave or on a sandwich press. Cut tortillas from the edge to the centre and roll into a cone.

Secure in place with a toothpick or tie with a napkin.

Fill each cone with lettuce, avocado, tomato and beef. Drizzle over reserved dressing and spoon over sour cream. Scatter with coriander leaves.

2 tbsp white wine vinegar

2 tsp ground cumin

2 tsp ground coriander

1 tsp prepared mustard

½ tsp sugar

600g beef fillet, cut into 4cm pieces

1 buttercrunch lettuce, washed

and leaves separated

1 avocado, cut into 2cm pieces

2 tomatoes, sliced

½ cup sour cream

½ cup coriander leaves
