Wholemeal Tortilla Recipes

Spinach quesadillas

Instructions

Heat oil in a frying pan and gently cook onion, garlic and spices until soft.

Add tomatoes to the pan and cook for 1 minute. Add spinach and cook gently until just cooked. Season with salt and pepper to taste.

Place 2 roti on a board and cover each with ¼ of the spinach mixture. Spoon over ¼ of the cottage cheese. Cover each with another roti and cover that with the remaining spinach and cottage cheese.Top with the remaining roti.

Heat a flat sandwich press and cook each roti stack, gently pressing it together.

Chop into wedges and serve.

2 tbsp olive oil

1 onion, finely chopped

2 cloves garlic, finely chopped

1 tsp grated ginger

1 tsp ground cumin

1 tsp ground coriander

½ tsp turmeric

½ tsp garam masala

Salt and freshly ground black pepper

2 tomatoes, finely chopped

4 cups (1 bag) chopped spinach

1 pack Bazaar® Traditional Roti

250g cottage cheese
