Cheese & Onion Toastie

Mix the 2 cheeses together in a small bowl.

Place the roti on a flat surface and cover half of each with a sprinkling
of cheese and onion (being careful not to overfill). Fold the Roti in half,
covering the ingredients, and press down firmly.

Heat Roti one at a time in a sandwich press until golden brown.

Serve whole or cut into triangles and top with avocado & Salsa.
