Instructions
Heat oil in a frying pan and gently cook onion and garlic until tender. Add cumin, paprika, coriander and mix well.
Increase the heat and add the mince to the pan, stirring until well browned.
Add tomato paste, tomatoes and courgettes and cook, for 20 minutes, stirring often.
Place 2 tortilla on a large oven tray and top with ¼ of the mince and then ¼ cup each of grated cheese. Top with another tortilla and then the mince and mozzarella. Finish with the last tortilla and sprinkle with remaining cheese.
Bake for 15 minutes until golden and the cheese has melted.
Cut the tortilla stacks into thirds and top with the combined avocado, red onion and tomato mixture.
