Mexican Sweet Chilli Chicken & Bacon Tortillas

Heat olive oil in a pan and brown onion. Add diced chicken breast and bacon, and gently fry. When all is browned, stir through a half of the taco seasoning mixed with 50ml of water.

Top the chicken bacon and onion mixture with triple cheese mix while still in the pan.

In a separate bowl, mash the avocado with half of the sour cream. Stir through a dash of chilli sauce and a dash of lemon juice add even more sour cream if desired.

When the cheese has melted on the chicken, divide the mixture into 4 portions and place on the tortillas. Top with the spicy mashed avocado, diced tomato and shredded lettuce. Finish with sweet chilli sauce to taste…then wrap.

2 small chicken breast fillets, diced

4 bacon rashers, chopped

1 small onion

1 tblsp olive oil

1 sachet taco seasoning

1 cup triple cheese mix (mozzarella, parmesan, & tasty)

1 avocado

1 tub sour cream

1 dash lemon juice

4 tblsp sweet chilli sauce

2 tomatoes, diced

1/2 iceberg lettuce, shredded
