Tortilla salad baskets

Heat oven to 180 C. Spray a 6-hole Texas muffin tin with oil. Lightly spray tortillas with oil. Push one tortilla into each muffin hole to form a basket – cut tortillas down a bit to fit, if necessary. Bake for 10 minutes or until golden and crispy. Remove to cool completely. Fill crisp tortilla baskets with chicken and salad. Combine dressing ingredients and season with salt and pepper. Drizzle salad with dressing just before serving.

1 pack Bazaar Wholemeal or White Tortillas

300g smoked chicken, sliced or cubed

100g rocket leaves

9 cherry tomatoes, halved

6 basil leaves



1 tbsp balsamic vinegar

2 tbsp extra virgin olive oil

Salt and freshly ground black pepper
